<p>Of course filters play an important role in managing the balance between over and under brewing your coffee. Not only do they keep the grind out of your cup, but they also control how fast the water passes over the grinds. Paper filters are the most common, but many people are also using metal varieties. Paper filters are quite good. However they can absorb some of the coffee flavour, and some people claim they can taste the paper in the final coffee. Metal filters are normally made from stainless steel or gold plated mesh. They have very fine weave and filter out the coffee grinds very well. They also do not alter the taste of the coffee at all. Metal filters are also more environmentally friendly than the paper alternative.</p>
<p>Whichever you choose, be sure to buy decent quality. Cheap filters often clog or not allow the coffee to brew properly. A decent quality metal filter will last years and save money in the end.</p>
<p>Brewing a cup of coffee is not that hard. Brewing a great cup takes a little more understanding, but isn&#8217;t any harder. Start with fresh beans and good clean water and then match your brewing style to the proper grind and then mess around with the exact proportions and pretty soon your be brewing killer coffee every time.</p>

Mint Chocolate Coffee </p>
<p>	1 ounce of chocolate mint liqueur<br />
	Dash of shaved chocolate<br />

	Regular coffee or try Dutch Chocolate Decaf </p>

Brew your regular coffee, add the 1 ounce of liqueur into your cup. Add some whipping cream if desired and sprinkle with shaved chocolate.<br />
Coffee Flavoured Milkshakes </p>
<p>	1 pint of coffee ice cream<br />
	2 teaspoons finely ground coffee<br />
	1/2 cup light rum (optional)<br />
	4 to 6 scoops vanilla ice cream<br />
	Instant coffee powder </p>
<p>Spoon coffee ice cream into blender. Add rum and finely ground coffee. Blend on high until creamy smooth. Pour into tall glasses, adding a scoop of the vanilla ice cream to each glass. Sprinkle lightly with instant coffee powder.<br />

Egg Nogg Coffee </p>

<p>	1 egg yoke<br />
	1/2 cup of cream<br />
	Dash of nutmeg<br />
Beat the suger and egg yoke together. Place cream in a saucepan and heat over low setting, do not burn. Wisk the egg mixture into the warmed cream, heat until hot. Add coffee to mugs and top with the cream mixture. Garnish the coffee with nutmeg.</p>

<p>Lattes: Foam and steam milk to 75 degrees (C). The ratio is worked out as 50% coffee and 50% milk. Slowly pour the milk down the side of the coffee cup or glass so it infuses with the coffee shot. The main differentiation between a latte and a cappuccino is a latte blends the milk and coffee together, whereas the cappuccino keeps the 2 apart. </p>
<p>Espressos: We have all had a foul espresso, right?. There are a number of reasons for this. The No.1 reason being an unfavorable coffee bean being used. If you like espressos you are most likely a lover of all things coffee and know what makes a good coffee bean. So with this in mind, to make a good espresso coffee you need to follow these instructions: </p>

<p>Coffee beans are similar to wine in that they name the coffee beans after the region of origin. In the world of wine you have the well-liked Sonoma wines which come from Sonoma Valley in California. In the world of coffee the equivalent would be Kona coffee beans which come from Kona, Hawaii. </p>
<p>Kona coffee beans are developed in rich volcanic soil and the placid tropical climate of the Kona coffee belt on the west side of Hawaii. It has a superbly full, rich and silky flavour with little or no bitter after taste. Be sure that you buy Kona coffee beans and not a Kona blend. A Kona blend can legally be labelled as Kona with as it consists of as little as 10% of actual Kona coffee bean.<br />
The next thing you will need to do is grind your gourmet coffee beans. Ground coffee starts to lose it’s flavour once it has been grinded and exposed to the fresh air.</p>
<p> So to keep the optimum freshness you will only grind what you need for that one gourmet cup of coffee. You will want to grind your coffee beans until they are extremely fine, but don’t pound them into dust. If the ground coffee is to fine the heat of your coffee machine with dry up all the oils of the coffee bean and it is this part that gives the gourmet coffee its exquisite flavour. </p>
<p>Another key element in good coffee making is to clean your coffee machine on a daily basis. A clean coffee machine makes a major distinction in the final taste of your coffee. At least once a month pour a mixture of 1/2 vinegar and 1/2 water into your coffee maker. Allow the mix to travel through the complete brewing process. Repeat the procedure again using only water this time to rinse out any junk or vinegar left inside. Do this until the smell of vinegar is no more.</p>
<p>Now your work is finished and it is time for the coffee machine to pull it’s weight. Use clean filtered water and fill the coffee maker to the desired level. Use about 6 ounces of water for every 2 heaping tablespoons of coffee. Turn it on and hang around while it brews. You will want to present to soak up the delightful aroma. </p>

All professional coffee makers (baristas) will have their own technique for making the perfect cup of coffee.  Here my home-grown suggestion…<br />
The whole process begins with simple water.  This water has to be good or no amount of decent coffee grounds will matter.  Water should be fresh and piping hot.  Water should not be stale, mildewy, unclean and not properly filtered.  The perfect temperature is just about at boiling point.</p>

<p>Now for the coffee – choose any coffee that is grown above 3000 feet above sea level.  There are many varieties – Brazilian, Bogotan – my favourite is espresso.  It should be pre-roasted, fresh within at least three days and smell good.</p>
<p>Robusta is one type of coffee that some people use for espresso machines, but it is not the best because it has very little flavour and way too much caffeine.  It is considered an easy to grow plant and fairly disease resistant than other coffee trees.</p>
<p>Coffee should be ground in what is called a burr.  Burr blades are pyramid in shape and have plates with two teeth that force the coffee to be ground in between.  However, coffee types like Viennese or French roasts are darker and are best chopped in grinders.  Grinder blades chop only.</p>
<p>The fineness of the grind is determined by the space between the plates.  Good-sized grains are the size of sand.  Avoid grains that resemble dust or gravel.  Be speedy when removing ground coffee from a grinder.  Too much exposure to the air makes it oxidize and absorb nearby smells.  Garlic infused coffee would be horrible!</p>
<p>A great cup of espresso requires a clean and top quality espresso machine, or the experience is not worth it.  What does this mean? Without a 9 bar pump pressure or more, the machine will be unable to generate thermoblock or boiler heat to properly stew the grinds.  The boiler will heat the water to the right temperature.  Avoid steam-pressurized machines and be careful not to burn yourself.</p>
<p>The next step is to make the coffee! Warm up your machine and clean it by running fresh water through it.  Simply turn it on, allow time for the water to heat up and flush the system and warm the inner surfaces by pouring a cup of water instead of coffee into it.  </p>
<p>Now carefully add your grounds and slightly pack them down like you would with pipe style tobacco.  It should feel slightly springy, but it should not move around suddenly when you remove your finger.</p>
<p>Put the hopper back into the machine in a firm manner.  Warm your espressos cup and stand it underneath the outlet.  Press start and in under five seconds you will have a shot’s worth of piping hot espresso.</p>
<p>Cappuccino is easily constructed by heating a half-cup of milk in your microwave for 90 seconds until it froths.  Add this to your espresso.  Garnish lovingly with nutmeg, chocolate or cinnamon.  I like all three.  Then sprinkle with brown sugar. Enjoy!</p>

<p>Some people like when the coffee roast is darker because they think it is important to the taste of the grind.  You might want to try different types until you find what you prefer; whether light, medium, or dark roast. Be sure to experiment and try different sorts until you find the one you like. Drive down just about any street in the United States and you will spot people holding coffee cups walking into their place of employment or just on a lazy morning stroll. With specialty coffee shops strategically tucked in our business districts, one would think coffee has always been in the United States, but this ever growing trend is not an original American idea.</p>

<p>It is believed that the first coffee trees were found in Ethiopia. Several urban legends surround the discovery of the coffee bean – the most familiar being a farmer who watched his goats eating the beans, and out of curiosity, ingested one and was impressed with the surge of energy the bean produced &#8211; but cannot be substantiated. But what we do know is that coffee beans found its way through the Arabian Peninsula that led to Yemen and Arabia. Yemen was the first area to cultivate the coffee bean. From there, it made its way to Turkey, where coffee beans were first roasted and then crushed and boiled in water, producing a very primitive version of the coffee we drink today.</p>
<p>Trade merchants brought coffee to Europe, and it quickly took off. Coffee houses popped up rampantly, and were the sites of philosophical and other intellectual discussions.</p>
<p>Then, in the 1700’s a French captain brought a tree from Europe to the Americas, and planted it on the Caribbean Island of Martinique. From there, coffee consumption spread like wild fire in Central and South America.</p>
<p>And in the mid-1800’s, Italy put its own spin on coffee by perfecting espresso in their region. France was known for making the first espresso machine, but the Italians found a way to add to the technology. They were the first manufacturers of the now ever popular espresso machine, and espresso remains a significant aspect of their culture today.</p>
<p>America added its own spin to coffee consumption. In the 1970’s, the “coffee revolution” was born in Seattle, WA. At that point, the latte – a coffee and milk beverage &#8211; was created, and sought after throughout the United States. This ingenious invention that has American buzzing around their jobs and life helped change the quality of coffee we drink now. It has also begun to quickly spread to other parts of the world – coffee shops and other coffee venues can be seen just about anywhere globally – but Americans are still dubbed the largest consumers of coffee.</p>
<p>Today, coffee is one of the largest world commodities – it falls second to petroleum world-wide. The coffee industry employs over 20 million people, 5 million alone in Brazil. Coffee industry workers cultivate and harvest over 3 billion plants all over the world – which helps support the approximately 400 billion cups of coffee consumed each year. In the United States, the coffee industry pulls in annual revenues of over a billion.</p>

Air is the enemy of all coffee drinkers. Once air comes in contact with your coffee grinds, they begin to lose their flavor. Coffee manufacturers vacuum seal their grinds to keep them fresh while they sit on the shelves at the supermarket but once you break that seal, it’s all downhill from there. Buying whole coffee beans and grinding them yourself is a great way to ensure that your coffee remains as flavorful as possible. But do you know how to grind your coffee beans properly?</p>

<p>Different types of coffee calls for different types of grinds. So you’ll need to learn to use your coffee grinder properly if you want to make the freshest best tasting coffee possible.</p>
<p>If you plan on brewing your coffee with a percolator or a French Press coffee maker then you’ll need a coarser grind. Place the coffee beans in your coffee grinder and tap the grind button a few times as you would use the pulse feature on your food processor. The goal is to break the beans up so that they look like tiny pieces of coffee bean. If they look like a powder, then you need to slowly back away from the coffee grinder and start again. Remember to tap the button and not hold it down.</p>
<p>Automatic drip coffee makers work best with medium grinds. Picture the grinds that you’d find in a can of supermarket coffee. Those are medium grinds. They can be described as looking like brown sand. So remember the last time you went to the beach but instead of seeing the sand in between your toes, imagine seeing sand in your coffee maker. Once again, while holding the coffee grinder button, don’t get carried away and over grind your coffee beans. You do not want a fine powder if you’re going to use an automatic coffee maker.</p>
<p>Finally if your using an espresso maker, you want those fine powdery grinds that you’ve been trying to avoid when making coarse and medium grinds. So grind away until your heart is content.</p>
<p>Grinding your own coffee beans right before you brew your coffee is a great way to make sure that you’re getting the freshest cup of coffee possible. But a fresh cup of coffee can still be bitter or weak. Learning how to grind your coffee beans is an important part of making great coffee.</p>
